Vanilla Ice Cream

Ingredients

  • 2 cups Pure Valley Creamery fresh cream
  • 1 cup Pure Valley Creamery fresh milk
  • 3/4 cup sugar
  • 1 vanilla bean (or 2 tsp vanilla extract)
  • 4 egg yolks

Instructions

  1. Heat cream, milk, and half the sugar in a saucepan. Split the vanilla bean and add seeds and pod (or add extract later).
  2. In a bowl, whisk egg yolks with remaining sugar until pale.
  3. Slowly pour hot milk mixture into yolks, whisking constantly, then return to saucepan.
  4. Cook over low heat, stirring, until thickened (do not boil). Remove vanilla pod if used.
  5. Chill mixture, then churn in an ice cream maker according to manufacturer's instructions.

Serving Suggestion

Serve with fresh berries or a drizzle of honey for a classic New Zealand treat.
