Vanilla Ice Cream

Ingredients
- 2 cups Pure Valley Creamery fresh cream
- 1 cup Pure Valley Creamery fresh milk
- 3/4 cup sugar
- 1 vanilla bean (or 2 tsp vanilla extract)
- 4 egg yolks
Instructions
- Heat cream, milk, and half the sugar in a saucepan. Split the vanilla bean and add seeds and pod (or add extract later).
- In a bowl, whisk egg yolks with remaining sugar until pale.
- Slowly pour hot milk mixture into yolks, whisking constantly, then return to saucepan.
- Cook over low heat, stirring, until thickened (do not boil). Remove vanilla pod if used.
- Chill mixture, then churn in an ice cream maker according to manufacturer's instructions.
Serving Suggestion
Serve with fresh berries or a drizzle of honey for a classic New Zealand treat.
